In town The XIX century is the golden period for the White Art in Gragnano. In the old buildings in via Roma, Piazza San Leone, via Santa Caterina, via Tommaso Sorrentino, via Pasquale Nastro e via Giovanni della Rocca were fitted out 100 and more pasta factories.

The local kneader are in great demand also elsewhere, where pasta is produced. On 12 May 1895 , King Umberto I and Queen Margherita  inaugurate Gragnano-Castellammare railway line to facilitate wheat’s arrive and pasta’s departure.

The notorious tax on flour, introduced by Quintino Sella and abolished in 1880 created temporary problems to Gragnano pasta making; the First and Second World Wars gave a big stimulus to Gragnano pasta making; Gragnano pasta factories produced at full speed to cover military supplies and the population food requirements.
